Chicken & Asparagus

(served with cooked brown rice)


You need:
  • a cup of brown rice
  • 1/2 cup chicken broth
  • some asparagus (diced into 1 inch or so)
  • about 1 lb. boneless chicken (cut into strips like the diced asparagus size)

Cook the brown rice (as instructed on the package.) At the same time, use 1 teaspoon light olive oil to cook the chicken. After the chicken is cooked (about 2-3 minutes), add asparagus in the cook and add chicken broth. Cook 'til the chicken broth are almost all gone. Cool it a little before mix it in the cooked brown rice.
